Butlers Steak, or Iron Steak, is a cut from the shoulder of the beast. Difficult to prepare, it is very full flavoured with a meaty bite. The steak can be pan seared as normal or slow cooked to give a meltingly tender stew or casserole. Becoming increasingly popular on restaurant menus, this is certainly an unconventional steak which must be tried.
Our beef is sourced from prime grass fed cattle from trusted local farms in the Scottish Borders and is matured on the bone in our dedicated maturing facilities.
